Crudaiola Barese

Ingredients
  

  • 1 lb. Sabbiatos Orecchiette Pasta
  • ½ lb. Cherry Tomatoes
  • 1 Bunch Fresh Basil Chop leaves thinly
  • ½ c Mozzarella grated
  • 1 clove Garlic minced
  • Salt and Pepper to taste
  • 4 tbsp Olive Oil plus extra to drizzle over top when serving.

Instructions
 

  • 1. Cook Orecchiette pasta according to package.
    2. Cut tomatoes into quarters.
    3. In a bowl, add tomatoes, garlic and basil leaves. Add a pinch of salt and pepper, drizzle with a little olive oil. Place in refrigerator to chill for 30 min.
    4. Drain the pasta (do not rinse it! We want to keep the starch that will bind the pasta and the sauce). Pour the pasta into the bowl with the crudaiola sauce. Mix.
    5. Drizzle with a drizzle of olive oil, pepper and add the grated Mozzarella. Mix and serve.
    6. Serve.

Notes

For extra flavor you can add Green or Black olives.
