Creamy Salmon Pasta

Ingredients
  

  • 3-4 Salmon Filets
  • tbsp Unsalted butter
  • ½ Lemon Thinly sliced
  • 2 tsp Garlic Puree or 4 Garlic cloves
  • c dry Gigli Pasta
  • 2 tbsp Unsalted Butter For sauce
  • 2 tsp Garlic minced
  • 1 c Heavy Cream
  • ½ c White wine
  • 1 c Spinach Fresh
  • ½ Lemon juice
  • ¼ c Parmesan Cheese

Instructions
 

  • 1. Pre-heat the oven at 425*
    2. Place the salmon fillets onto a large foil sheet, spread top of each fillet with Garlic puree, pepper, slice of lemon and a small knob of butter. cover and seal up with another sheet of foil.
    3. Cook in the oven for 15-20 mins.
    4. Meanwhile, cook the pasta according to package instructions.
    5. Place the butter with 2 teaspoon minced garlic in the pan over medium heat until melted, add the cream, wine, pepper and squeeze juice from ½ lemon. Heat until the sauce starts to boil then reduce to a simmer and keep stirring until thick and creamy.
    6. When the pasta is cooked and drained place in pan along with the spinach and Parmesan, cook on a simmer for 3 mins until Parmesan is melted and spinach has wilted.
    7. Break the fillets into big chunks and serve on top of the pasta, with a generous grating of more Parmesan.
