Orecchiette has the shape of a small dome, with its center thinner than its edge, and with a rough surface. Italian orecchia ‘ear’, Italian ad -etta ‘small’) are a pasta typical of Puglia Apulia, a region of the southeastern region of Italy that forms the heel of Italy’s boot. Their name comes from their shape, which resembles a small ear.
Orecchiette translates to ‘little ears’ but despite the weird meaning, this pasta is one of the best. Although it originated in the early 12th century, this type of pasta remains popular to this day.
