Garlic Parmesan Orzo

Ingredients
- 2 tbsp olive oil
- 4 tbsp unsalted butter
- 2 shallots chopped
- 4 cloves garlic minced
- 2 cups Sabbiatos orzo dry
- ½ tsp salt or to taste
- ¼ tsp pepper or to taste
- 2 cups vegetable broth low sodium
- 2 cups whipping cream
- 1½ cup parmesan cheese freshly grated
- 2 tbsp fresh parsley chopped
Instructions
- Heat olive oil and butter in heavy pan over medium heat. Add shallot, cook for 1 minute. Add garlic, cook for an additional minute.
- Sprinkle orzo over shallot and garlic mix until lightly brown. Season with salt and pepper.
- Slowly pour in vegetable broth and cream. Bring to a boil then turn the heat down to simmer and cover. Cook for 5-10 minutes until orzo is tender.
- Remove lid and stir in the Parmesan cheese and fresh parsleyServe immediately
