Garlic Parmesan Orzo

Garlic Parmesan Orzo

Ingredients
  

  • 2 tbsp olive oil
  • 4 tbsp unsalted butter
  • 2 shallots chopped
  • 4 cloves garlic minced
  • 2 cups Sabbiatos orzo dry
  • ½ tsp salt or to taste
  • ¼ tsp pepper or to taste
  • 2 cups vegetable broth low sodium
  • 2 cups whipping cream
  • cup parmesan cheese freshly grated
  • 2 tbsp fresh parsley chopped

Instructions
 

  • Heat olive oil and butter in heavy pan over medium heat. Add shallot, cook for 1 minute. Add garlic, cook for an additional minute.
  • Sprinkle orzo over shallot and garlic mix until lightly brown. Season with salt and pepper.
  • Slowly pour in vegetable broth and cream. Bring to a boil then turn the heat down to simmer and cover. Cook for 5-10 minutes until orzo is tender.
  • Remove lid and stir in the Parmesan cheese and fresh parsley
    Serve immediately
